We have done a lot of mentoring and "bit parts" on many sites, but here is a list of 5.x Drupal sites in which we have had a greatly significant impact on site architecture, development and/or process engineering:
http://macc.ceee.gwu.edu/: Theme according to client provided vector graphics and adapted to bluebreeze theme, under the hood is to be found a complicated content workflow based on the action and workflow modules, organic groups for ad hoc and pre-established employee communities and access rules, plus the event module, and of course, extensively themed CCK + views.
curtisbiologia.com: This site puts the Buenos Aires published version of the famous Helena Curtis Biology textbook on-line. The highly customized theme was Zen powered and based on the graphic design of Leandro Garcia, a friend of the house. Extensive use is made of CCK and Views, plus the glossary module.
http://helpargentina.org/: Wow, this was a huge endeavor. It was big in functionality: i18n fully bilingual, extensive use of customized easy to edit pages referencing and including content, extensive on-the-fly creation of users and content types via coding, plus cool use of touches such as image rotator (swftools module).But very high up on my list of important work was the use of an agile approach with heavy client participation (yeah Ingo and Dan!) using an early version of Project Flow and Tracker. This project went through many iterations, too many, really, and even though I did not do the e-commerce part of the functionality, I did set it up and was responsible for the initial theming (both of them :) ) through friend of the house Leandro Garcia's web design and for 85% of the architecture and coding.
